Instructions

Step 1: Prepare the Grain-Free Crust
  • Combine 1 cup almond meal, 1/2 cup rolled oats, and 2 tbsp honey (or maple syrup) in a bowl.

  • Mix until the texture is crumbly and well-combined.

  • Press a layer of this mixture into the bottom of your serving jars or glasses.

Step 2: Create the Protein 'Cheese' Filling
  • In a separate bowl, whisk together 3 cups plain Greek yogurt (or almond 'cheese'), 2 scoops vanilla whey protein isolate, 1 tbsp lemon zest, and 1 tsp vanilla bean paste.

  • Mix until the filling is rich, smooth, and fully "fortified" with the protein powder.

  • Spoon a thick layer of this filling over the crust in the jars.

Step 3: Add the Berry Compote
  • Gently layer 2 cups of mixed berries (raspberries and blueberries) over the protein filling.

  • For a more "compote" style, you can lightly mash some of the berries to release their juices before layering.

Step 4: Garnish and Serve
  • Top the parfait with sliced almonds for added crunch.

  • Enjoy immediately as a post-workout treat or let it chill in the refrigerator to set further.
