1 cup Almond Meal
1/2 cup Rolled Oats
2 tbsp Honey (or Maple Syrup)
3 cups Plain Greek Yogurt (or Almond ‘Cheese’)
2 scoops Vanilla Whey Protein Isolate
1 tbsp Lemon Zest
1 tsp Vanilla Bean Paste
2 cups Mixed Berries (Raspberries/Blueberries)
Sliced Almonds for Garnish

Instructions
Step 1: Prepare the Grain-Free Crust
Combine 1 cup almond meal, 1/2 cup rolled oats, and 2 tbsp honey (or maple syrup) in a bowl.
Mix until the texture is crumbly and well-combined.
Press a layer of this mixture into the bottom of your serving jars or glasses.
Step 2: Create the Protein 'Cheese' Filling
In a separate bowl, whisk together 3 cups plain Greek yogurt (or almond 'cheese'), 2 scoops vanilla whey protein isolate, 1 tbsp lemon zest, and 1 tsp vanilla bean paste.
Mix until the filling is rich, smooth, and fully "fortified" with the protein powder.
Spoon a thick layer of this filling over the crust in the jars.
Step 3: Add the Berry Compote
Gently layer 2 cups of mixed berries (raspberries and blueberries) over the protein filling.
For a more "compote" style, you can lightly mash some of the berries to release their juices before layering.
Step 4: Garnish and Serve
Top the parfait with sliced almonds for added crunch.
