Ingredients

(2 servings)
  • 300 g silken tofu

  • 60 g quick oats (or oat flour)

  • 20 g cornstarch

  • 25 g grated cheese (parmesan, cheddar, mozzarella — whatever you have)

  • 1 tsp dried oregano

  • ½ tsp dried thyme

  • ½ tsp salt

  • Black pepper to taste

  • 1 tsp olive oil (for brushing/spraying)

Optional:

  • Chili flakes

  • Paprika

  • Fresh herbs on top after cooking

Instructions

1. Make the mixture
  • Drain tofu gently.

  • Mash tofu in a bowl.

  • Add oats, cornstarch, cheese, herbs, salt, and pepper.

  • Mix until combined.

2. Let it thicken
  • Let the mixture sit 10 minutes so the oats absorb moisture.

Texture should be:

  • thick

  • sticky

  • scoopable

  • able to roughly hold shape

If too wet:

  • add 1–2 tbsp more oats

3. Shape
  • Wet or lightly oil your hands.

  • Form small balls or scoop rough mounds.

(Silken tofu stays soft — perfection is not required.)

4. Air fry
  • Place on parchment paper.

  • Lightly brush/spray oil on top.

  • Air fry at 190°C for 12–15 minutes.

Optional:

  • Add a little extra cheese on top during the last 2 minutes.
