Chickpea Buns
High Protein easy chickpea buns

Ingredients
(makes ~6 medium buns)
200 g whole grain flour
100 g chickpea flour
7 g dry yeast (1 packet)
1 tsp sugar (to activate yeast)
1 tsp salt
150 g cottage cheese or thick yogurt (or 50/50 mix)
120–150 ml warm water
1 tbsp olive oil

Instructions
Activate yeast
Mix warm water + sugar + yeast
Let sit ~5–10 min until foamy
Mix dough
Combine flours + salt
Add cottage cheese/yogurt + olive oil + yeast mixture
Knead
Knead ~8–10 minutes until soft
Dough should be slightly sticky but elastic
First rise
Cover and let rise ~1 hour (until doubled)
Shape
Divide into 6 buns
Place on baking tray
Second rise
Let rest 20–30 min
Bake
180°C (fan) for ~20–25 minutes
