High Protein easy chickpea buns

Ingredients

(makes ~6 medium buns)

  • 200 g whole grain flour

  • 100 g chickpea flour

  • 7 g dry yeast (1 packet)

  • 1 tsp sugar (to activate yeast)

  • 1 tsp salt

  • 150 g cottage cheese or thick yogurt (or 50/50 mix)

  • 120–150 ml warm water

  • 1 tbsp olive oil

  • Calories: ~180–200 kcal

  • Protein: ~9–11 g

  • Carbs: ~25–28 g

  • Fat: ~4–5 g

  • Fiber: ~4–5 g

Instructions

  1. Activate yeast

    • Mix warm water + sugar + yeast

    • Let sit ~5–10 min until foamy

  2. Mix dough

    • Combine flours + salt

    • Add cottage cheese/yogurt + olive oil + yeast mixture

  3. Knead

    • Knead ~8–10 minutes until soft

    • Dough should be slightly sticky but elastic

  4. First rise

    • Cover and let rise ~1 hour (until doubled)

  5. Shape

    • Divide into 6 buns

    • Place on baking tray

  6. Second rise

    • Let rest 20–30 min

  7. Bake

    • 180°C (fan) for ~20–25 minutes
