Broccoli Cheese Balls

Ingredients

  • Dough

    • 200 g broccoli (florets + stem)

    • 25 g Parmesan

    • 25 g shredded cheese

    • 30 g panko breadcrumbs

    • 25 g whole grain flour

    • 1 small egg

    • ½ tsp salt (~3 g)

    • ¼–½ tsp black pepper

    • ½ tsp paprika (optional)

  • Filling

    • 60 g Hard Cheese

Instructions

  1. Cook broccoli

    • Boil or steam for 3–4 minutes

    • Drain well and let cool slightly

  2. Remove moisture

    • Squeeze out as much water as possible (very important)

  3. Chop/mash

    • Roughly chop or mash (keep some texture but make it very small)

  4. Make the dough

    • Mix broccoli with Parmesan, shredded cheese, panko, flour, and spices

    • Mix until it holds together when pressed

  5. Shape patties

    • Take a portion, flatten in your hand

    • Add ~10 g cheese in the center

    • Close and shape into a patty

  6. Cook

    • Heat oil in a pan (medium heat)

    • Cook 3–4 minutes per side until golden and crispy

  7. Rest briefly

    • Let them sit 1–2 minutes so they firm up
