Broccoli Cheese Balls
Ingredients
•Dough
200 g broccoli (florets + stem)
25 g Parmesan
25 g shredded cheese
30 g panko breadcrumbs
25 g whole grain flour
1 small egg
½ tsp salt (~3 g)
¼–½ tsp black pepper
½ tsp paprika (optional)
Filling
60 g Hard Cheese

Instructions
Cook broccoli
Boil or steam for 3–4 minutes
Drain well and let cool slightly
Remove moisture
Squeeze out as much water as possible (very important)
Chop/mash
Roughly chop or mash (keep some texture but make it very small)
Make the dough
Mix broccoli with Parmesan, shredded cheese, panko, flour, and spices
Mix until it holds together when pressed
Shape patties
Take a portion, flatten in your hand
Add ~10 g cheese in the center
Close and shape into a patty
Cook
Heat oil in a pan (medium heat)
Cook 3–4 minutes per side until golden and crispy
Rest briefly
Let them sit 1–2 minutes so they firm up
