Ingredients

  • 2 cups broccoli florets (very finely chopped, steamed or blanched)

  • 1 cup breadcrumbs (or Panko for extra crisp)

  • 2 eggs

  • 1 to 1½ cups shredded cheese (cheddar or mozzarella work best)

  • ½ cup grated Parmesan cheese

  • Salt & pepper (to taste)

  • Optional: garlic powder, onion powder, paprika

Instructions

  1. Prep broccoli
    Steam or boil broccoli for 2–3 minutes until soft, then drain very well. Chop it very finely (important so the balls hold together).

  2. Mix everything
    In a bowl combine:

    • chopped broccoli

    • eggs

    • shredded cheese

    • Parmesan

    • breadcrumbs

    • seasoning

    Mix until you get a thick, sticky mixture.

  3. Form balls
    Scoop small amounts (about 1 tablespoon) and roll into balls. Press firmly so they hold shape.

  4. Bake
    Place on a baking tray lined with parchment paper.
    Bake at 190–200°C (375–400°F) for about 20–25 minutes, until golden and slightly crispy.

  5. Optional upgrade
    Lightly brush or spray with oil before baking for extra crunch.

🔥 Tips (important)
  • Squeeze broccoli dry → otherwise they fall apart.

  • Chop the Broccoli really fine

  • More Parmesan = more flavor + better binding.

  • If mixture feels too wet, add extra breadcrumbs.

  • You can also air-fry them for extra crispiness.
